Dried apple uzvar is a wholesome, vitamin-packed drink made from just four things: dried apples, boiling water, sugar, and a pinch of citric acid. Half an hour on a gentle simmer gives it a rich fruity flavor and a beautiful amber color. You can drink it both hot and cold - I recommend it!

Dried Apple Uzvar
A rich, vitamin-packed uzvar made from dried apples with sugar and a pinch of citric acid - makes 2.5 liters of drink.
Ingredients
Method
- Sort through the dried apples and rinse well under cold running water. Drain in a colander and let dry.

- Transfer the dried apples to a pot, pour in boiling water to make 2.5 liters, and add the sugar and citric acid.

- Bring to a boil, reduce the heat to low, and simmer for about 30 more minutes - until fragrant, richly colored, and the dried apples have plumped up.
- Uzvar is delicious both hot and cold. Enjoy!

Notes
You can reduce the sugar if the dried apples are already sweet - taste the drink toward the end of cooking.
Tips
- Be sure to sort through the dried apples and rinse them well under cold running water - this determines how clean the flavor and how clear the drink will be.
- Citric acid isn't just for a light tang: it also preserves the uzvar's beautiful color.
- Signs it's ready: a fruity aroma, rich color, and dried apples that have fully plumped up.
