Cottage Cheese Casserole with Dried Fruit

A hearty cottage cheese casserole with condensed milk, prunes, dried apricots and raisins - a great homemade breakfast.

Ingredients
  

  • 600 g cottage cheese
  • 3 egg yolks
  • 250 g condensed milk
  • 100 g dried fruit prunes, dried apricots, raisins

Method
 

  1. Pour boiling water over the dried fruit - prunes, dried apricots and raisins - and let sit for a couple of minutes. Drain, dry, and chop into small pieces.
  2. Beat the cottage cheese, egg yolks and condensed milk with a mixer until light and fluffy. Add the dried fruit and mix.
  3. Transfer the mixture to a greased baking dish - I use a square one.
  4. Bake for about an hour at 180°C. Remove the casserole and let it cool, then wrap it in plastic wrap and refrigerate overnight so it can set.
  5. In the morning, cut the casserole into pieces - and breakfast is ready. Enjoy!

Tips

  • Dried fruit: soak it in boiling water for a couple of minutes, dry it and chop it finely - it softens and blends into the mix better.
  • Resting: the overnight rest in the fridge under plastic wrap is essential - the casserole slices better and the flavor comes through.
