These are those very grandma's waffles from childhood - crispy, thin, with a bright buttery flavor. The batter whips up in ten minutes, and you can bake them in an old heavy waffle iron or a modern one. I confidently recommend making these and judging for yourself - enjoy!

Crispy thin waffles from childhood made with butter and sour cream - the batter comes together in 10 minutes.

Ingredients
  

  • 125 g flour
  • 100 g sugar
  • 60 g sour cream
  • 2 eggs
  • 125 g butter
  • baking soda generous pinch
  • vanillin pinch
  • salt pinch

Method
 

  1. Whip the sugar with the eggs until fluffy - the volume should increase and the mixture turn pale.
  2. Add the baking soda, vanillin, salt, sour cream, and melted butter, continuing to whip.
  3. At the end, sift in the flour and whip for another couple of minutes - the batter is ready.
  4. Heat the waffle iron, brushing it with vegetable oil. Spoon about 1 tbsp of batter into the center and close the iron.
  5. Bake for about 5 minutes, checking periodically, until golden on both sides. Dust with powdered sugar - ready to enjoy!

Tips

  • While these waffles are still hot, they're easy to roll into tubes for filling with cream.
  • Use the first waffle as a test run to dial in the baking time for your waffle iron.
