Savoiardi cookies, also known as ladyfingers, are made from just four ingredients and bake in 12-15 minutes. A dough on a firm egg meringue gives light, airy cookies perfect for tiramisu or simply with tea or coffee. Recommended - the result will absolutely impress you.

Savoiardi Sponge Cookies

Classic Savoiardi sponge cookies (ladyfingers) made from four ingredients - for tiramisu and for tea.

Ingredients
  

  • 70 g wheat flour
  • 70 g sugar
  • 2 eggs
  • 1 pinch salt
  • 1 pinch vanillin
  • powdered sugar for dusting

Method
 

  1. Beat the eggs with a pinch of salt with a mixer into a fluffy foam.
  2. Add the sugar in three additions and continue beating until a firm meringue forms.
  3. Sift in the flour with the vanillin in a couple of additions and fold in gently with a spatula until smooth.
  4. Transfer the dough to a piping bag and pipe the cookies onto a baking tray. Dust generously with powdered sugar through a sieve.
  5. Bake for 12-15 minutes in an oven preheated to 180°C until pink-golden. You can take the cookies out right away or leave them to cool in the oven with the door slightly ajar.

Notes

These cookies are suitable for tiramisu and other desserts and cakes.

Tips

  • Add the sugar in three additions and beat until a firm, stable meringue forms.
  • Sift the flour in two additions and fold it in with a spatula, not a mixer.
  • Before baking, generously dust the cookies with powdered sugar through a sieve - this gives the signature crust.
  • For drier cookies, leave them to cool in the turned-off oven with the door slightly ajar.
