Method
- Make the marinade: to 3-4 tbsp olive oil add 1 tsp honey, 0.5 tsp salt, ground pepper, lemon juice, minced garlic and juniper sprigs, and mix well.
- Trim the cartilage off the drumsticks with a knife, clean the skin, and leave no more than 2 cm of bare bone. Wrap each bone in foil.
- Rub each drumstick well with the marinade and wrap in bacon, securing with a toothpick.
- Roast in a preheated 180°C oven for 40-50 minutes.

Tips
- Wrap the exposed bone in foil so it doesn't burn and the dish is easy to eat with your hands.
- Secure the bacon with a toothpick, or it will unravel during baking.
- You can swap the juniper for rosemary or thyme.
