Zucchini boats with vegetables and a cheesy crust are an amazing vegetable appetizer, one of my family's favorites. The zucchini are filled with carrots, tomatoes, herbs and peas, then baked for half an hour. They look gorgeous and impressive on the table, and I won't even start on the taste - simply a fantastic dish!

Zucchini Boats
Single-serve zucchini "boats" filled with vegetables and herbs under a cheesy crust, baked in the oven.
Ingredients
Method
- Wash the zucchini, cut in half lengthwise and scoop out the flesh with a spoon.
- Salt the "boats" and fry them on both sides in a hot, dry skillet.
- Prepare the filling: chop the zucchini flesh, carrot, tomato and herbs, add the peas and spices, and mix.

- Fill the boats with the vegetable mixture and top with grated cheese.

- Bake in an oven preheated to 200°C for 30-35 minutes. Then grab your oars and set sail on a long voyage. Enjoy!

Notes
The filling can be anything your heart desires - the mix of vegetables can be changed to suit your taste.
Tips
- Filling - whatever your heart desires: mine has zucchini flesh, carrot, tomato, herbs, peas and spices, but you can freely change the mix to your own taste.
- Choose small zucchini - they make neat, single-serve "boats" that hold their shape well.
