Whole fried new potatoes uses potatoes the size of a walnut that you don't even need to peel: just wash them well and fry until golden, adding garlic and parsley at the end. It comes together very quickly and turns out fantastically tasty. Recommended.

Whole Fried New Potatoes
Small new potatoes fried whole until golden and crispy, finished with garlic and parsley.
Ingredients
Method
- Wash the potatoes well, using a brush if needed - small new potatoes don't need peeling.
- Heat a skillet with oil, add the potatoes and fry on all sides, stirring constantly.
- Cover with a lid and fry until done - new potatoes cook quickly.
- At the very end, add salt, garlic and herbs, cook for another couple of minutes for aroma, then turn off the heat.

Tips
- Use only small new potatoes - their skin is thin, so there's no need to peel them, just scrub with a brush.
- Add salt at the very end, together with the garlic and herbs - this way the potatoes stay crispy on the outside.
