Tuna pasta on a bed of vegetables comes together in the time it takes to boil the pasta: diced eggplant and zucchini are sauteed and layered underneath, with al dente pasta and canned tuna on top. Filling, quick and very tasty. Recommended.

Tuna Pasta on a Bed of Vegetables
Al dente pasta with canned tuna, served on a bed of sauteed eggplant and zucchini, with cheese chips and basil.
Ingredients
Method
- Bring water for the pasta to a boil and cook it according to the package instructions: mine took 10 minutes to reach al dente.
- While the pasta cooks, finely dice the zucchini and eggplant and saute in a skillet until done.
- Add the tuna to the cooked pasta and mix.
- Arrange a bed of vegetables on a plate, top with the tuna pasta. Garnish with onion and basil and top with cheese chips.

Tips
- Cook the pasta strictly according to the package instructions: mine took 10 minutes for al dente.
- Cheese chips on top make the dish more interesting - they're easy to dry out in a dry skillet or in the oven.
- Add the red onion and basil right at the end, once the dish is already plated.
