Oatmeal Cookies with Rye Flour
Fragrant oatmeal cookies made with rye flour, cinnamon and honey - the dough is mixed with a spoon in five minutes.
Ingredients
Method
- In a bowl, mix the dry ingredients: rolled oats, both types of flour, salt, sugar, cinnamon and baking powder.
- Pour in the melted but cooled butter, beat in the egg, add the honey and mix the dough with a spoon.
- With damp hands, roll into balls, place on a baking sheet greased with vegetable oil or lined with parchment, and press down lightly.

- Bake in an oven preheated to 160-170°C for 12-15 minutes. Let the finished cookies cool. Enjoy!

Notes
This recipe makes 9-12 cookies depending on their size.
Tips
- Melt the butter ahead of time and be sure to let it cool, or the egg will curdle.
- Roll the balls with damp hands and press down lightly on top - the cookies barely spread.
- A heaping spoon of wheat flour is my own addition to the original recipe - it helps the dough hold together better.
