A wonderful airy little cloud - kefir souffle with a hint of citrus. I once spotted this dessert from the lovely cook Tatyana, and I still can't part with it. A light, no-bake dessert - I highly recommend it!

Kefir Souffle with Orange
Airy souffle made from kefir and sour cream with gelatin and pieces of orange. A light no-bake dessert that sets in the fridge.
Ingredients
Method
- Soak the gelatin in cold water and set aside to bloom.
- Meanwhile, whip the kefir, sour cream, sugar and vanillin well with a mixer, until the sugar dissolves.
- Melt the bloomed gelatin by warming it on the stove. Pour it through a sieve into the kefir mixture and whip with the mixer for another three minutes or so, until airy bubbles appear.
- Place pieces of orange into jars or dessert glasses and pour the souffle over them. I alternate: a little orange, then a good amount of souffle.
- Place in the fridge for 4 hours to fully set, or in the freezer for 30 minutes. Decorate as you like. Bon appetit!

Notes
If you're short on time, the souffle can be set in the freezer in 30 minutes instead of 4 hours in the fridge.
