Kefir cold soup (kholodnik) is a Belarusian cold soup with beets, fresh cucumber, herbs and a boiled egg, a great alternative to okroshka. It comes together quickly and can be eaten right away or chilled first. Highly recommended.

Kefir Cold Soup (Kholodnik)
A Belarusian kefir-based cold soup with boiled beets, fresh cucumber, herbs and egg.
Ingredients
Method
- Boil the beets and eggs, then let them cool.
- Chop the fresh cucumber, herbs and beets.
- Pour in the kefir, dilute with water to the desired thickness, add salt and citric acid.
- Cut the boiled eggs into wedges and add to the soup. Chill before serving if desired.

Tips
- Add water to taste - it determines how thick the soup will be.
- Citric acid gives a pleasant tang, add it just a pinch at a time.
- It's handy to boil the beets and eggs ahead of time and chill them.
