Grilled chicken wings over an open flame come out juicy with a crisp crust, thanks to a honey-mustard marinade with onion. Marinating overnight is best, but even half a day gives great results, and the wings grill over fruit-wood coals. I recommend kicking off grilling season with these - enjoy!

Grilled Chicken Wings
Chicken wings in a honey-mustard marinade with onion, grilled over charcoal until juicy with a crisp crust.
Ingredients
Method
- Put the wings in a bowl and coat each one generously with mustard. Add the spices and salt, then add the honey and water acidified with vinegar.
- Slice the onion into rings and add it to the meat. Mix well by hand, cover and let it marinate somewhere cool - ideally overnight, though I go with half a day.

- Prepare the grill: load wood (I use fruit wood) or ready-made charcoal and let it burn down to hot coals.
- Place the meat and onion on the grill rack and cook on both sides, turning often for even cooking.

- Remove the finished wings from the grill and serve. Enjoy!

Tips
- Marinating: ideally overnight, but even half a day in the fridge or a cool cellar gives good results.
- Wood: fruit wood works great and gives a mild aroma; ready-made charcoal works too.
- Grilling: turn the grate often so the meat cooks evenly.
