Put the wings in a bowl and coat each one generously with mustard. Add the spices and salt, then add the honey and water acidified with vinegar.
Slice the onion into rings and add it to the meat. Mix well by hand, cover and let it marinate somewhere cool - ideally overnight, though I go with half a day.
Prepare the grill: load wood (I use fruit wood) or ready-made charcoal and let it burn down to hot coals.
Place the meat and onion on the grill rack and cook on both sides, turning often for even cooking.
Remove the finished wings from the grill and serve. Enjoy!
