Chocolate Tart with Apples

Shortcrust chocolate tart with an apple-cinnamon filling and chocolate shavings. Tender, fragrant baking - serve with a scoop of ice cream.

Ingredients
  

Dough
  • 140 g flour
  • 4 tbsp cocoa
  • 2 egg yolks
  • 4 tbsp sugar
  • 100 g butter melted
  • 0.5 tsp baking powder
  • 60 ml water cold
Filling and decoration
  • 6 apples
  • 1 tbsp cinnamon
  • 2 tbsp sugar plus a little for sprinkling
  • 2 tbsp butter
  • 50 g chocolate shaved
  • 1 egg white for brushing

Method
 

Dough
  1. Combine the flour with the cocoa and baking powder, mix. Pour in the melted butter, add the sugar and yolks, and knead a firm dough, gradually adding cold water.
  2. Pinch off a third of the dough and set aside. Roll out the rest very thin and line a buttered tart pan, not forgetting the edges. Chill in the fridge for about 20 minutes.
Filling
  1. Wash the apples, peel, core and cut into pieces.
  2. Leave half the apples in a bowl, put the other half in a saucepan with a splash of water, sugar, cinnamon and butter. Simmer over low heat until the apples are tender.
  3. Remove from heat, combine with the raw apples and mix. Add the chocolate shavings and mix again.
Assembly and baking
  1. Spread the filling over the chilled base. Cut thin cookies of any shape from the reserved dough and arrange them on top.
  2. Brush the pie with egg white and sprinkle with sugar.
  3. Bake in an oven preheated to 180 °C for 30 minutes. Serve with a scoop of ice cream - trust me, it's delicious. Bon appetit!

Notes

Half the apples in the filling stay raw - so the finished tart has both soft and firm pieces.
