Ingredients
  

  • 3 eggs
  • 50 g sugar
  • 50 g flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 tbsp cocoa powder
  • 15 g shredded coconut
  • 15 g almond flakes
  • 15 g chocolate shavings for topping
  • butter for greasing the pan

Method
 

  1. Whip the eggs with the salt and sugar into a thick, fluffy foam.
  2. Sift the cocoa, baking powder, and flour into the mixture, and gently fold in with a spatula.
  3. Add the shredded coconut and almond flakes, gently fold in again, and pour the batter into a pan greased with butter.
  4. Sprinkle chocolate shavings on top and bake for 15-20 minutes at 180°C. Check for doneness with a matchstick.
  5. Let the finished sponge cool and cut into slices. Enjoy!

Notes

The sponge is thin, so it bakes quickly - start checking for doneness at the 15-minute mark.

Tips

  • Whip the eggs with the salt and sugar until a truly thick, fluffy foam forms - there's no baking powder helping out in this batter, all the volume rests on them.
  • Fold in the dry ingredients and shredded coconut gently with a spatula, using bottom-to-top motions, so you don't deflate the mixture.
  • Check for doneness with a matchstick or skewer: it should come out dry.
  • Cut into slices only once the sponge has completely cooled - warm sponge crumbles.
