- Whip the eggs with the salt and sugar into a thick, fluffy foam.
- Sift the cocoa, baking powder, and flour into the mixture, and gently fold in with a spatula.
- Add the shredded coconut and almond flakes, gently fold in again, and pour the batter into a pan greased with butter.

- Sprinkle chocolate shavings on top and bake for 15-20 minutes at 180°C. Check for doneness with a matchstick.

- Let the finished sponge cool and cut into slices. Enjoy!

The sponge is thin, so it bakes quickly - start checking for doneness at the 15-minute mark.
Tips
- Whip the eggs with the salt and sugar until a truly thick, fluffy foam forms - there's no baking powder helping out in this batter, all the volume rests on them.
- Fold in the dry ingredients and shredded coconut gently with a spatula, using bottom-to-top motions, so you don't deflate the mixture.
- Check for doneness with a matchstick or skewer: it should come out dry.
- Cut into slices only once the sponge has completely cooled - warm sponge crumbles.
