Chicken meatballs in tomato sauce are tender meatballs made with chicken breast and milk-soaked bread, baked in the oven under a sauté of onion, carrot, garlic and tomato paste. A great alternative to fried patties: it's easy and not at all greasy. I recommend topping the finished dish generously with fresh herbs - buon appetito!

Ingredients
  

Meatballs
  • 1 chicken breast
  • 1 egg
  • 2 slices white bread
  • 50 ml milk
  • 2 tbsp flour
  • salt, seasoning, turmeric
Tomato sauce
  • 1 onion large
  • 2 carrots
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • salt, seasoning to taste
  • vegetable oil
  • herbs for serving

Method
 

  1. Soak the bread in milk. Process the chicken breast in a food processor together with the egg and the soaked bread.
  2. Add seasoning and flour to the mixture, mix and shape into small meatballs with wet hands.
  3. Arrange the meatballs on an oiled baking sheet and bake for 20 minutes at 180°C.
  4. Meanwhile, finely chop the onion and grate the carrot. Sauté them in vegetable oil, adding garlic, seasoning and salt along the way.
  5. Add the tomato paste and a little water if needed, and cook the sauté until nearly done.
  6. Pour the sauce over the meatballs and bake for another 10 minutes. Top the finished dish generously with chopped herbs.

Tips

  • Shape the meatballs with wet hands - the mixture won't stick.
  • Turmeric in the mixture gives it a lovely golden color.
  • If the sauté turns out too thick, add a little water.
