Buckeyes Candy
American "Buckeyes" candies made from peanut butter, butter, and powdered sugar, half-dipped in dark chocolate. No baking required.
Ingredients
Method
- In a bowl, combine the peanut butter, powdered sugar, and softened butter. Knead into a smooth mixture.
- Roll the mixture into small balls - about the size of a buckeye or walnut, roughly two bites each. Chill in the fridge for 1 hour.
- While the balls chill, melt the chocolate over a double boiler.
- Skewer a ball on a toothpick and dip it into the chocolate, leaving a bare uncoated circle on top. Let the excess chocolate drip off and place the candy on parchment. Repeat with all the balls.

- Chill the candies until the chocolate sets. That's it - enjoy!
Notes
Dip the balls on a skewer, leaving an open circle on top - the signature "eye" of Buckeyes candy.
Tips
- The signature "eye": dip the ball on a skewer into the chocolate so a bare circle stays uncoated on top - that's exactly what makes the candy look like a buckeye.
- Ball size - about the size of a buckeye or walnut, roughly two bites: any bigger and they get too filling.
- Let the excess chocolate drip off before setting the candies on parchment - the bottoms will stay neat.
