Ingredients

  • 200 g peanut butter
  • 50 g butter softened, room temperature
  • 125 g powdered sugar
  • 100 g dark chocolate

Method

  1. In a bowl, combine the peanut butter, powdered sugar, and softened butter. Knead into a smooth mixture.
  2. Roll the mixture into small balls - about the size of a buckeye or walnut, roughly two bites each. Chill in the fridge for 1 hour.
  3. While the balls chill, melt the chocolate over a double boiler.
  4. Skewer a ball on a toothpick and dip it into the chocolate, leaving a bare uncoated circle on top. Let the excess chocolate drip off and place the candy on parchment. Repeat with all the balls.
  5. Chill the candies until the chocolate sets. That's it - enjoy!

Notes

Dip the balls on a skewer, leaving an open circle on top - the signature "eye" of Buckeyes candy.
