Fluffy yeast buns with cherries and a sweet crunchy streusel topping. Any berry works for the filling, but I strongly recommend cherries with their pleasant tartness. Bake with confidence - a great tea time and mood are 100% guaranteed!

Baked Cherry Buns with Streusel

Fluffy yeast buns with milk dough, a cherry filling and a sweet streusel crumb. Any berry can replace the cherries.

Ingredients
  

Dough
  • 300 ml milk warm
  • 6 tbsp vegetable oil
  • 60 g sugar
  • 0.5 tsp salt
  • 550 g flour
  • 2 tsp dry yeast
Filling
  • 300 g pitted cherries fresh or frozen
  • 40 g sugar
  • 2 tbsp cornstarch
Streusel and glaze
  • 50 g butter cold
  • 50 g sugar
  • 50 g flour
  • 1 egg for brushing the buns

Method
 

Dough
  1. In a bowl, mix the flour with the dry yeast. In another bowl, dissolve the sugar and salt in the warm milk, then add the vegetable oil.
  2. Gradually add the flour mixture to the milk and knead a soft, elastic dough. Set in a warm place for 1-1.5 hours to rise well.
Filling
  1. If using frozen cherries, thaw them, remove any pits if needed, and drain excess liquid through a sieve.
  2. Add sugar and cornstarch to the cherries and mix - the filling is ready.
Shaping and baking
  1. Pinch off pieces of dough and stretch each into a circle. Place cherries in the center and pinch the bun closed.
  2. Arrange the buns fairly close together on a baking sheet greased with vegetable oil. Let proof for 15-20 minutes.
  3. Rub cold butter, sugar and flour together into a crumb - this is the streusel.
  4. Just before baking, brush the buns with beaten egg and sprinkle with streusel.
  5. Bake in an oven preheated to 200 °C for 30-35 minutes. Let the finished buns cool - and enjoy. Bon appetit!

Notes

Any berry can replace the cherries, but the buns turn out especially good with tart cherries.
