Zucchini Fritters with Spinach and Herbs

Zucchini fritters with spinach and herbs are tender, fragrant fritters made from grated zucchini and plenty of fresh herbs, fried for a couple of minutes on each side. The batter is mixed right in the bowl with a spoon: zucchini, spinach, onion, dill, egg and two spoons of flour. Highly recommend - enjoy!

Ingredients
  

  • 1 fresh zucchini
  • 1 bunch spinach
  • 1 bunch green onion
  • 1 bunch fresh dill
  • 1 egg
  • 2 tbsp flour
  • salt to taste
  • vegetable oil for frying

Method
 

  1. Grate the zucchini and transfer it to a bowl.
  2. Add the chopped herbs - spinach, green onion and dill - then the egg, flour and salt. Mix the batter with a spoon.
  3. Using the same spoon, shape fritters into a hot pan with vegetable oil and fry for a couple of minutes on each side. Enjoy!

Tips

  • If the zucchini releases a lot of liquid, squeeze the mixture out lightly - otherwise you'll need more flour.
  • Shape the fritters with the same spoon you used to mix the batter and place them straight into the hot pan.
