"Feride" rolls are beautiful eastern-style ring rolls made from a yeast-free, baking-powder dough filled with butter, sugar, and cinnamon. The dough is rubbed with margarine into crumbs and rests for just 10 minutes, and the whole trick lies in the slits cut into the sheet, which give the roll its lacy look. Fantastically tasty and appetizing - I recommend it!

Ingredients
Method
- Sift the flour into a bowl with the baking powder, salt, and sugar. Add the cold margarine and rub it into the flour until crumbly. Pour in the cold milk, add the egg white, and knead the dough. Let it rest on the counter for 10 minutes.

- Pinch off a piece of dough and roll it out into a thin rectangular sheet. Spread with butter and sprinkle with sugar and cinnamon. Cut lengthwise slits into the sheet, stopping short of the edge.

- Roll the sheet up into a log.

- Twist the log into a ring and pinch the ends together.

- Arrange the rolls on parchment paper, brush with egg yolk, and sprinkle with poppy seeds, nuts, or decorative sprinkles. Bake for 30 minutes at 180°C.

- Let the finished rolls cool and serve. Enjoy!

Notes

Tips
- Use cold margarine and milk - the dough rubs into crumbs and turns out short and crumbly.
- Don't cut the slits all the way through the sheet - otherwise the roll will fall apart when you twist it into a ring.
- Be sure to pinch the ends of the ring together so the roll doesn't unwind in the oven.
- Topping: your choice - poppy seeds, nuts, or decorative sprinkles like mine. Brush with egg yolk so it sticks.
