Cottage cheese rings are a simple homemade cookie made from cottage cheese, egg, and flour that turns out flaky and wonderfully fragrant. The dough comes together in five minutes, rests for 15 minutes, then gets cut into strips and twisted into little rings. Bake for 20 minutes at 180°C - I recommend these, kids especially love them.

Ingredients
Method
- Mash the egg, sugar, and cottage cheese together and whisk. Sift in the flour with the salt and baking powder, and knead by hand into a dough. Gather into a ball and let it rest for 15 minutes.

- Roll the dough out thinly into a rectangular sheet, cut it into strips with a knife, and twist each strip into a ring (you can also just leave it as a strip).

- If you like, sprinkle with poppy seeds, sesame seeds, or nuts. Place on a baking tray greased with vegetable oil and bake for 20 minutes at 180°C, flipping halfway through.

- Let the finished cookies cool completely. Enjoy!

Tips
- The topping changes the flavor: poppy seeds, sesame seeds, chopped nuts, or sugar - take your pick.
- It helps to flip the cookies once during baking so they brown evenly.
