Two-tone panna cotta with blueberries is a portioned dessert made of two layers: first the milky vanilla-cream layer sets, then the blueberry layer is poured on top. Each layer needs a couple of hours in the fridge, or better yet overnight. A light, airy dessert for summer heat or for a celebration - I recommend it.

A portioned two-layer dessert: vanilla-cream panna cotta and a blueberry cream layer set with gelatin.

Method
Milk layer
- Soak the gelatin in cold water and wait for it to bloom.
- Combine the cream with the sugar and vanilla sugar, place over low heat, bring to a boil and remove from the heat.
- Add the gelatin and stir well until fully dissolved.
- Let the mixture cool slightly, pour into bowls or glasses and chill in the fridge for a couple of hours until set.
Berry layer
- Soak the gelatin in cold water.
- In a saucepan, cook the blueberries with the sugar, bring to a boil and puree.
- Bring the cream to a boil over low heat, remove from the heat and dissolve the gelatin in it.
- Combine the berry puree with the cream, let cool slightly and pour over the set milk layer.

- Chill in the fridge for a couple of hours, or better yet overnight.

Tips
- Pour the berry layer only once the milk layer has fully set, otherwise the layers will mix.
- Let the mixture cool a bit before pouring - hot cream will soften the bottom layer.
- You can serve it in bowls, glasses, or any individual dishes.
