Method
- Simmer the salmon backbone to make a rich broth, remembering to add a whole onion to the pot.
- Remove the backbone from the broth and fish out the onion.
- Add diced potatoes and carrots to the simmering broth. Cook until almost tender, then add the pieces of bell pepper.
- While the soup finishes cooking, pick the salmon meat off the backbone.
- Return the fish meat to the finished soup, add fresh herbs, bring to a boil and turn off the heat. Enjoy!
