This rustic honey cake is mixed with a whisk in 15 minutes: kefir with baking soda, honey, oats, spices, raisins and walnuts. It bakes as a single layer in a 16-18 cm pan for exactly 60 minutes at 160 °C. It's incredibly fragrant, and you can enjoy it even without any frosting - I recommend it.

Ingredients
Method
- Add the baking soda to the kefir and let it sit for 5 minutes to react.
- In a bowl, whisk the eggs with the honey and sugar, pour in the kefir with baking soda and stir together.
- Add the dry spices (cinnamon, nutmeg, ginger), flour and rolled oats and mix again.
- At the very end, add the ground walnuts and raisins that have been soaked in boiling water, dried and tossed in cornstarch.
- Mix the batter and pour into a 16-18 cm pan.
- Bake for 60 minutes at 160 °C.

- Let the finished cake cool completely. If you like, slice it and fill with your favorite frosting.

Notes
The cake is airy and delicious even without any frosting.
Tips
- Let the kefir and baking soda sit for 5 minutes to react - this gives the cake its airiness.
- Soak the raisins in boiling water ahead of time, pat them dry and toss in cornstarch so they don't sink to the bottom.
- You can slice the finished cake and fill it with any frosting you like, but it's wonderful on its own too.
