Pumpkin Cake with Walnuts
A fragrant sponge cake made with pumpkin puree, walnuts, and vanilla. Rich and vivid - a great choice for breakfast.
Ingredients
Method
- Make the puree: cut the pumpkin into pieces, simmer in a saucepan with a little water and 30 g of butter, then blend with an immersion blender and let cool.
- Beat the eggs with the sugar into a light foam.
- Sift the flour, baking powder, and vanillin into the egg mixture and beat again.
- Add the pumpkin puree and walnuts, and beat once more. Pour the batter into a pan greased with vegetable oil.
- Bake in a preheated 180-190°C oven for 34-40 minutes. Let cool - and it's ready to eat. Enjoy!

Notes
The puree for the cake needs to be cooled - if it's hot, it will deflate the beaten egg foam.
