Potato balls with melted cheese and herbs are a hearty snack made from ready mashed potatoes, baked in the oven rather than fried. Coated in breadcrumbs, they turn out crispy outside and gooey inside. Ready in 40 minutes, I recommend them - enjoy!

Ingredients

  • 500 g mashed potatoes ready-made
  • 100 g processed or hard cheese
  • chopped herbs
  • salt
  • pepper
  • 1 egg
  • flour
  • breadcrumbs

Method

  1. Add the chopped herbs and spices to the mashed potatoes and mix. Cut the cheese into small pieces.
  2. Scoop a spoonful of mashed potato, flatten it in your palm, tuck in a piece of cheese, and shape into a ball.
  3. Roll each ball in flour, dip in the egg, and coat with breadcrumbs.
  4. Place the balls on a baking tray and bake for 15-20 minutes at 190-200°C - and they're done!

Tips

  • The mashed potatoes need to be firm and cool, otherwise the balls won't hold their shape.
  • Mozzarella works great instead of processed cheese - it stretches beautifully.
