Melted ice cream muffins are a great way to use up leftover ice cream: it replaces both the milk and the fat in the batter. You need just five ingredients, and each muffin hides a chocolate chip inside. One cup of ice cream makes 9 muffins - they turned out really delicious, recommended!

Ingredients
  

  • 1 cup ice cream melted
  • 1 egg
  • 5 tbsp flour plus a little more if the batter is thin
  • 3 tbsp sugar
  • 1 tsp baking powder
  • chocolate chips 1 per muffin

Method
 

  1. Take the ice cream out ahead of time and let it melt right in the cup - you should end up with nearly a full cup.
  2. Whisk the egg with the sugar, add the melted ice cream and mix well.
  3. Add the flour and mix to the consistency of thick sour cream. If it's too runny, add a bit more flour.
  4. Stir in the baking powder and mix once more.
  5. Transfer the batter to a piping bag and fill the molds a third full. Drop one chocolate chip into the center of each and cover with batter.
  6. Bake in a preheated 160-180 °C oven for 18-20 minutes. Remove and let cool. Enjoy!

Notes

A great way to use up leftover ice cream: it replaces both the milk and the fat in the batter.

Tips

  • Any ice cream works - I used one scoop of vanilla and one scoop of sherbet. Just take it out ahead of time and let it melt completely.
  • Aim for the consistency of thick sour cream. If the batter's too runny, add a bit more flour.
  • Add the baking powder last, once the batter is already at the right consistency, and mix once more.
  • Fill the molds a third full - the muffins rise well. A piping bag makes this easiest.
  • A chocolate button inside: drop a chip in the center and cover with batter - it's a nice surprise when you break the muffin open.
