Method
- Put the room-temperature butter and sugar into a bowl and beat with a whisk until pale.
- Add the three large eggs to the butter mixture, along with the lemon zest and juice. Whisk well again.
- Add the flour, baking powder, and poppy seeds, and mix everything well again - the batter is ready.
- Divide the batter among paper liners.
- Bake in the oven for 20-25 minutes at 180 °C. Let the finished muffins cool - and they're ready to eat. Bon appetit!

Notes
The butter needs to be soft and at room temperature - only then will it cream properly with the sugar and give you fluffy muffins.
