Lazy pilaf with pork is made in a single deep skillet: the rice is soaked in boiling water ahead of time, the meat is fried with onion and carrot, then everything simmers under a lid until the water evaporates. Salt and spices go in right at the end, and turmeric gives it a lovely golden color. I recommend it as a quick, filling dinner.

Lazy Pork Pilaf

Ingredients
  

  • 300 g boneless pork
  • 1 cup rice
  • 2 carrots
  • 2 onions
  • 3 cloves garlic
  • salt
  • khmeli suneli seasoning
  • turmeric
  • vegetable oil
  • water

Method
 

  1. Rinse the rice, pour boiling water over it in a saucepan, and leave to soak.
  2. Cut the meat into pieces, and chop the onion and carrot however you like. Add the meat and vegetables to a hot, deep skillet with vegetable oil and fry until half-cooked, adding the garlic cloves partway through.
  3. Drain the water from the rice and add it to the meat and vegetables. Add water until the rice and meat are fully submerged, cover with a lid, and simmer until done and the water has evaporated.
  4. Right at the end, add salt, seasoning, and turmeric for a lovely golden color. Enjoy!

Tips

  • Add salt and seasoning at the end: salting too early keeps the rice from cooking through properly.
  • Turmeric is mainly there for color - a pinch is enough.
