This lazy-batter Easter bread is mixed with just a spoon or a hand whisk - no kneading by hand and no mixer needed. The batter rises for an hour, is divided into tins and bakes for 30-35 minutes, and turmeric gives the crumb a beautiful yellow color. The recipe makes 3 small breads, 9 cm in diameter - recommended.

Lazy Liquid-Batter Easter Bread

Easter bread made with a liquid batter mixed with a spoon - no kneading, with raisins, cranberries and turmeric.

Ingredients
  

For activating the yeast
  • 200 ml warm milk
  • 5 g dry yeast
  • 2 tbsp wheat flour
  • 1 tbsp sugar
Batter
  • 240 g wheat flour
  • 1 egg
  • 60 g sugar
  • 40 g butter
  • 1 pinch vanillin
  • 1 pinch salt
  • 0.5 tsp turmeric
  • 100 g raisins and cranberries

Method
 

  1. Pour the warm milk into a bowl, add the yeast, sugar and flour, mix well with a whisk. The mixture should become bubbly and free of lumps.
  2. In another bowl, mix the egg, sugar, melted butter, a pinch of salt, vanillin and turmeric until smooth.
  3. Add the yeast mixture, stir well again with a spoon or whisk, sift in the flour and mix the batter until smooth.
  4. Cover with plastic wrap and leave in a warm spot for 1 hour to rise.
  5. Add the dried fruit to the risen batter, stir and spoon it into the tins, filling them to almost half. Leave in a warm spot until the loaves rise nicely.
  6. Bake for 30-35 minutes in an oven preheated to 175-180°C. Let the finished loaves cool and decorate.

Notes

The recipe makes 3 small loaves in 9 cm diameter tins.

Tips

  • The turmeric is added for color - the crumb comes out sunny yellow, as if made with lots of egg yolks.
  • Fill the tins with batter to almost half - it will rise nicely.
  • Instead of raisins and cranberries, you can use any dried fruit, nuts or candied fruit.
