A moist, fragrant cake with citrus juice and zest and fresh ginger root.
Ingredients
Method
- In a mixer bowl, beat the softened butter with the sugar, then add the eggs one at a time and beat until fluffy.
- Add the juice of one orange, the citrus zest and the finely grated ginger, mix with the mixer.
- Sift in the flour with the baking powder and beat until the batter is smooth.
- Pour the batter into a 16 cm pan (bottom lined with parchment, sides greased) and smooth the top.
- Bake in an oven preheated to 160-170°C for 40-50 minutes, checking doneness with a skewer - it should come out dry.

- Let the finished cake cool and decorate as you like, for example with chocolate spread. Enjoy!
Notes
The author used a 16 cm pan.
Tips
- Line the bottom of the pan with parchment and grease the sides.
- Grate the ginger finely so it spreads evenly through the batter.
- Decorate however you like - I used chocolate spread.
