Chocolate muffins with candied fruit turn out fluffy and full of little air pockets thanks to double chocolate: cocoa in the batter plus a chocolate bar melted into hot milk. They come together very quickly and bake for 20-25 minutes at 180 °C. They just disappear off the plate, highly recommended.

Chocolate Muffins with Candied Fruit
Fluffy chocolate muffins made with melted chocolate, cocoa, honey and pieces of candied fruit - ready in under an hour.

Method
- In a bowl, whisk the room-temperature butter together with the sugar and honey. Add the egg and mix again.
- In a separate bowl, heat the milk with the chocolate until smooth. Let it cool slightly, then combine with the butter and egg mixture.
- Sift in the flour with the baking powder and cocoa. Finally add the candied fruit - the batter is ready.
- Divide the batter among the muffin molds. Bake in an oven preheated to 180 °C for 20-25 minutes, checking for doneness with a skewer.
- Let the finished muffins cool, then enjoy. Enjoy your meal!

Notes
Be sure to let the chocolate milk cool before combining it with the egg mixture. Mine were ready in exactly 20 minutes.
Tips
- The butter needs to be room temperature - only then will it cream properly with the sugar and honey.
- Let the chocolate milk cool before combining it with the butter and egg mixture, otherwise the egg will curdle.
- Add the candied fruit at the very end, once the flour is already folded in, so it distributes evenly through the batter.
- Check for doneness with a skewer: mine were ready in exactly 20 minutes, but go by your own oven.
