Chocolate batter
- Melt the butter with the cocoa and let cool.
- Beat the eggs with the salt and sugar with a mixer into a light foam. Add the chocolate mixture and beat again.
- Sift the flour and baking powder into the batter, beat until smooth, and pour into the baking pan.
Cottage cheese layer
- Mash the cottage cheese with the cream and sugar using a fork.
- Add the cornstarch and the blitzed mint - both its juice and a bit of the pulp. Add food coloring if you'd like a brighter color. Mix and pour over the chocolate batter.
Baking and glaze
- Bake the brownie in a preheated 180-190°C oven for 40-45 minutes. Remove and let cool.
- Make the glaze from the sugar, milk, and cocoa, then stir in the butter. Pour the glaze over the cooled cake.

- Leave the brownie in the fridge overnight - then you can enjoy it. Enjoy!

After a night in the fridge, the layers settle and the brownie slices into neat pieces.
Tips
- Color of the mint layer: for a brighter shade you can add food coloring - but that's optional, it won't change the flavor.
