Broccoli and Cheese Bruschetta
A hot appetizer of baguette slices topped with broccoli, cherry tomatoes, bell pepper, and basil under melted cheese.
Ingredients
Method
- Slice the baguette and spread each slice with mayonnaise or any other sauce.
- Top with broccoli florets, a cherry tomato in the center, pieces of bell pepper, and basil. Season with salt and pepper, and sprinkle the tomato with a pinch of sugar.

- Top with grated cheese and bake in an oven preheated to 200°C for 10-12 minutes.

- Remove the finished bruschetta and serve right away. Enjoy!

Notes
I use frozen broccoli - pre-boiled florets that are only half done.
Tips
- Broccoli - frozen and pre-boiled until half done works well, it'll finish cooking in the oven.
- Sauce: any kind works - I simply spread mayonnaise on the baguette.
- A pinch of sugar on the cherry tomatoes brings out their flavor and cuts the extra tartness.
- Serve right away - bruschetta tastes best hot, while the cheese is still stretchy.
