Ingredients
  

  • 65 g black (charcoal) flour
  • 50 g wheat flour
  • 100 g butter cold
  • 1 pinch salt
  • 1 tsp sugar
  • 2 tbsp cold water as needed

Method
 

  1. Mix all the dry ingredients: charcoal and wheat flour, salt and sugar.
  2. Grate the cold butter and knead the dough by hand, adding cold water as needed. Gather the dough into a ball and chill it in the fridge for 30 minutes.
  3. Take the dough out and roll it thin on the counter, dusting with flour as needed. Cut out cookies with cutters.
  4. Place the cookies on a floured baking sheet and bake in an oven preheated to 180°C for 10-15 minutes.
  5. Let the finished cookies cool. Enjoy!

Tips

  • The butter needs to be very cold: grate it straight from the fridge so the cookies come out as crumbly as possible.
  • Add water one tablespoon at a time and only if needed - the dough should just barely come together into a ball.
  • Roll the dough out thin and dust the counter with flour so the shapes lift off easily.
