A wonderful "sweet tomato" sauce - a versatile winter preserve made from tomatoes, bell pepper, onion and garlic. I use it in everything, and my husband just eats it by the spoonful. Go ahead and can it, then use it in your everyday home cooking!

"Sweet Tomato" Sauce
A versatile, slightly sweet tomato sauce for winter, made from tomatoes, bell pepper, onion and garlic - simmered until done and sealed into jars.
Ingredients
Method
- Run the tomatoes, onion, garlic and pepper through a meat grinder.
- Put the mixture on the stove and simmer over low heat until it comes to a boil. Then add the salt, sugar, ground pepper and vinegar.
- Cook until done, skimming off any foam as you go. Taste it: once the flavor is right, turn off the heat.
- Quickly ladle the sauce into sterilized jars and seal.
- Wrap the jars up. Once fully cooled, store them in the cellar. Happy preserving!
