Delicious thin, lacy crepes made with potato starch - these are simply a hit, I really love them. The batter comes together in ten minutes, and the crepes turn out stretchy and full of little holes. Highly recommend!

Thin, lacy crepes made with potato starch and milk. Stretchy and full of little holes - great with honey, jam, or a savory filling.

Ingredients
  

  • 500 ml milk
  • 10 tbsp potato starch
  • 2 tbsp flour
  • 1 pinch salt
  • 3 tbsp sugar
  • 3 eggs
  • 4 tbsp vegetable oil plus a little for the pan

Method
 

  1. Beat all the ingredients together with a mixer in a deep bowl. Pour in the vegetable oil last, mix, and let the batter rest on the counter for about 10 minutes.
  2. Heat a pan well, greasing it with vegetable oil.
  3. Stirring the batter each time (the starch settles to the bottom), pour it onto the pan and fry the crepes on both sides.
  4. Stack the finished crepes. Best eaten hot off the pan - with honey or jam. Enjoy!

Notes

You can fill any leftover crepes - for example, with mashed potatoes.

Tips

  • Stir the batter before each crepe: the starch settles quickly to the bottom, so give it a stir every time before scooping.
  • Serving: best served hot off the pan, with honey or jam. You can also fill the leftovers - I filled mine with mashed potatoes.
