Cottage cheese roll cookies are strips of soft cottage cheese dough about 3 cm wide, rolled up into little spirals and baked for 30 minutes at 180 C. The dough has no eggs, just cottage cheese and butter, and you can add cinnamon inside if you like. Just right for tea time - I recommend it, enjoy!

Cottage Cheese Roll Cookies
Cottage cheese cookies shaped as little rolls, made from soft dough with cottage cheese and butter, with optional cinnamon.
Ingredients
Method
- Put the room-temperature butter, cottage cheese, sugar, vanilla sugar and a pinch of salt into a bowl. Mash and rub together with a spatula or fork.
- Sift in the flour with the baking powder in two additions and knead the dough. Put it in a bag and refrigerate for 30 minutes.
- Divide the dough into 2 pieces and roll each one out thin into a rectangular sheet, sprinkling with cinnamon if you like.
- Cut the sheet into strips about 3 cm wide and roll each one into a spiral. Place on parchment.
- Bake for 30 minutes in a well-preheated oven at 180 C. Enjoy!

Tips
- The required 30 minutes in the fridge makes the dough easier to roll out.
- Roll the sheet thin - then the roll will have well-defined layers.
- Add ground cinnamon if you like, sprinkling it over the rolled-out sheet before cutting.
