- Beat the room-temperature butter for about five minutes, then gradually add the sugar with vanilla sugar and beat again.
- Add two eggs and continue beating, then add the smooth pureed cottage cheese and beat again.
- Sift in the flour with salt and baking powder and mix.
- Finally add the lemon essence and steamed raisins and mix - the batter is ready.
- Spread the batter in a rectangular pan and bake in a well-preheated 170 °C oven for 60-70 minutes; a skewer should come out dry.
- Let the cake cool completely before serving.
