Method
- Add the chopped herbs and spices to the mashed potatoes and mix. Cut the cheese into small pieces.
- Scoop a spoonful of mashed potato, flatten it in your palm, tuck in a piece of cheese, and shape into a ball.
- Roll each ball in flour, dip in the egg, and coat with breadcrumbs.
- Place the balls on a baking tray and bake for 15-20 minutes at 190-200°C - and they're done!

Tips
- The mashed potatoes need to be firm and cool, otherwise the balls won't hold their shape.
- Mozzarella works great instead of processed cheese - it stretches beautifully.
