- Mix the dry ingredients: wheat flour, oat flour, whole rolled oats, cinnamon, vanilla and salt.
- Soak the raisins in boiling water, drain, and pat dry on a paper towel. Chop the chocolate.
- Beat the butter with the sugar until pale and the sugar has dissolved, add the egg, and beat a little more.
- Add the butter mixture to the dry ingredients along with the chocolate and raisins, and mix by hand. The dough will be sticky - that's how it should be.
- Grease your hands with oil, roll balls about one and a half walnuts in size, flatten each slightly, and place on parchment.
- Bake for 15-20 minutes at 180°C in a preheated oven.

Tips
- It's easy to make your own oat flour: just pulse rolled oats in a blender.
- The dough is sticky - that's normal; grease your hands with oil before shaping.
- Soak the raisins in boiling water, drain, and pat dry on a paper towel.
