Dried fruit cake is a simple butter cake in which dried apricots, prunes and dates are first steeped in boiling water to keep them moist. It bakes at 160-170°C for 40 to 60 minutes - check doneness with a wooden skewer. I highly recommend it with tea or coffee - enjoy!

Dried Fruit Cake
A hearty butter cake with dried apricots, prunes and dates - a great addition to tea or coffee.
Ingredients
Method
- Wash the dried fruit and pour boiling water over it for 15 minutes. Drain, pit the dates, and chop everything into pieces.
- Beat the room-temperature butter until fluffy, gradually adding the sugar.
- Add the eggs one at a time, continuing to beat, and finish with a couple of tablespoons of cream.
- Sift the flour with the baking powder and mix with a mixer until smooth.
- Add the dried fruit and fold in with a spatula.
- Grease the pan with vegetable oil, add the batter and bake in an oven preheated to 160-170°C for 40-60 minutes. Check doneness with a skewer - it should come out dry.

- Let the finished cake cool and remove from the pan. Enjoy!

The author's cake baked for 60 minutes.
Tips
- Make sure to remove the pits from the dates before chopping.
- The butter needs to be at room temperature, otherwise it won't whip up into a fluffy mass.
- My cake baked for exactly 60 minutes - go by the dry skewer test.
