- Thaw the dough. Thaw the spinach if needed; if using fresh, chop it.
- Grate the processed cheese into the spinach and mix - the filling is ready.
- Unroll the dough and cut it into triangular wedges, place filling on the wide end and roll up into a croissant.

- Arrange the croissants on a baking sheet, brush with egg yolk and sprinkle with sesame seeds.

- Leave the croissants in a warm spot for about an hour.
- Bake in an oven preheated to 180-190 °C for 25 minutes; let the finished croissants cool.

Tips
- If you want, you can make the yeast dough yourself, but ready-made frozen dough saves a lot of time.
- Both fresh and frozen spinach work: if using frozen, thaw and squeeze it out first.
- Don't skip the hour of proofing in a warm spot - it's what makes the croissants puff up nicely.
