- Rinse the peas under running water and soak overnight in cold water for 8-12 hours.
- Rinse the peas again, transfer to a pot, and cover with water by about an inch. Cook for 1.5-2 hours until fully soft, topping up water as it boils away.

- Remove from the heat, drain any remaining water, add salt and butter, and blend until smooth. Serve hot.

Notes
Leftover mash can be used as a filling for hand pies.
Tips
- You only need a little water for cooking - it should cover the peas by about an inch; top it up gradually if it boils away.
