Homemade latte is a layered drink of steamed milk, strong espresso and milk foam, and with an espresso machine it comes together in about five minutes. The main trick is whipping the milk into soft, stable foam without overheating it, then pouring the coffee in a thin stream down the side of the glass. I recommend giving it a try - it's just as good as at a coffee shop.

Ingredients
  

  • milk
  • coffee 100% arabica
  • sugar to taste

Method
 

  1. Turn on the espresso machine and set the glass on the warming plate. Pour the milk into a pitcher, measure out the coffee, load it into the portafilter, tamp it firmly, and lock it into the machine.
  2. Steam the milk until hot with soft, stable foam. Make sure the milk doesn't overheat or, worse, boil.
  3. Pour the steamed milk into the Irish coffee glass, almost to the top.
  4. Pull a strong shot of espresso.
  5. Pour the coffee into the glass of milk in a thin stream down one side, so it forms layers.
  6. Your latte is ready - enjoy your coffee!

Tips

  • Glassware: an Irish coffee glass works best, and it's worth warming it beforehand.
  • Milk: steam it until hot, but don't overheat it and definitely don't let it boil - the foam will collapse.
  • Layers: pour the espresso in a thin stream down one side of the glass - that keeps the layers clearly defined.
