Marble cake with a cottage cheese layer - a moist chocolate cake where layers of batter and cottage cheese alternate and get swirled into a pattern with a wooden skewer. It bakes in one pan in half an hour, and looks striking when sliced. I recommend making it and giving it a try!

Chocolate-Cottage Cheese Marble Cake

A moist chocolate cake with a cottage cheese layer and a marbled pattern when sliced. Simple one-pan baking in 45 minutes.

Ingredients
  

Chocolate batter
  • 100 g flour
  • 125 g sugar
  • 100 g chocolate
  • 1 tbsp cocoa powder
  • 100 g butter
  • 2 eggs
  • 1 tsp baking powder
  • 1 pinch salt
Cottage cheese batter
  • 200 g cottage cheese
  • 100 g sugar
  • 1 egg
  • 1 tbsp flour

Method
 

Cottage cheese part
  1. Put the cottage cheese in a deep bowl, add the egg, flour and sugar. Mash well with a fork until smooth.
Chocolate batter
  1. Melt the chocolate with the butter and let it cool completely.
  2. Whip the eggs with the sugar into a fluffy foam. Pour in the cooled chocolate-butter mixture and whip again.
  3. Sift the cocoa, flour, and baking powder into the mixture and salt. Mix briefly - just until combined.
Assembly and baking
  1. Grease a baking pan with vegetable oil. Divide the chocolate batter into about 3 parts, and the cottage cheese batter into 2.
  2. Spoon the first part of chocolate batter onto the bottom, dot the cottage cheese batter over it in a few spots, then add chocolate again, then cottage cheese, and finish with the last part of chocolate batter. Smooth with a spoon and drag a wooden skewer through to create swirls.
  3. Bake in an oven preheated to 180°C for 20-25 minutes.
  4. Let the finished cake cool and cut into slices. Enjoy!

Notes

Don't mix the layers too vigorously - the marble pattern comes precisely from the batters staying separate.

Tips

  • Butter with chocolate must be cooled after melting - a hot mixture will deflate the eggs whipped with sugar.
  • Flour with cocoa and baking powder should be folded in only briefly, just until combined: the less you mix, the more tender the crumb.
  • The marble pattern comes out best if you drag the skewer across the surface just a couple of times - extra swirling blends the layers into one color.
