Melted ice cream muffins are a great way to use up leftover ice cream: it replaces both the milk and the fat in the batter. You need just five ingredients, and each muffin hides a chocolate chip inside. One cup of ice cream makes 9 muffins - they turned out really delicious, recommended!

- Take the ice cream out ahead of time and let it melt right in the cup - you should end up with nearly a full cup.
- Whisk the egg with the sugar, add the melted ice cream and mix well.
- Add the flour and mix to the consistency of thick sour cream. If it's too runny, add a bit more flour.
- Stir in the baking powder and mix once more.
- Transfer the batter to a piping bag and fill the molds a third full. Drop one chocolate chip into the center of each and cover with batter.
- Bake in a preheated 160-180 °C oven for 18-20 minutes. Remove and let cool. Enjoy!

Tips
- Any ice cream works - I used one scoop of vanilla and one scoop of sherbet. Just take it out ahead of time and let it melt completely.
- Aim for the consistency of thick sour cream. If the batter's too runny, add a bit more flour.
- Add the baking powder last, once the batter is already at the right consistency, and mix once more.
- Fill the molds a third full - the muffins rise well. A piping bag makes this easiest.
- A chocolate button inside: drop a chip in the center and cover with batter - it's a nice surprise when you break the muffin open.
