5/5 - (5 votes)

Vanilla cupcakes are tender, airy, and wonderfully fragrant, made with cream cheese and melted butter. The batter comes together with a mixer in 15 minutes, the cupcakes bake for 18-20 minutes at 180°C, and with a swirl of frosting on top they turn into festive treats. I recommend it - enjoy!

Total Time 35 minutes
Servings: 12 cupcakes

Ingredients

  • 120 g flour
  • 0.5 tsp baking powder
  • 0.25 tsp baking soda
  • 100 g butter melted and cooled
  • 90 g sugar
  • 65 g powdered sugar
  • 2 eggs
  • 120 g cream cheese or unsweetened farmer's cheese spread
  • 1 ml vanilla extract

Method

  1. Beat the eggs with the sugar and powdered sugar. Pour in the melted, cooled butter and beat again. Add the cream cheese and continue beating.
  2. Sift the flour, baking soda, and baking powder into a bowl, mix, and beat with a mixer. Add the vanilla extract right at the end.
  3. Transfer the batter to a piping bag and pipe into silicone molds, filling them halfway.
  4. Bake at 180°C for 18-20 minutes - check doneness with a dry toothpick.
  5. Let the cupcakes cool completely, remove from the molds, and top with frosting.

Tips

  • Instead of cream cheese, you can use smooth (not grainy) farmer's cheese spread or vanilla curd cheese bars.
  • Be sure to cool the melted butter before adding it to the egg mixture.
  • Fill the liners only halfway - the batter rises well.
