Vanilla cupcakes are tender, airy, and wonderfully fragrant, made with cream cheese and melted butter. The batter comes together with a mixer in 15 minutes, the cupcakes bake for 18-20 minutes at 180°C, and with a swirl of frosting on top they turn into festive treats. I recommend it - enjoy!

Vanilla Cupcakes
Tender, airy vanilla cupcakes made with cream cheese and melted butter - a great base for a frosting swirl.
Ingredients
Method
- Beat the eggs with the sugar and powdered sugar. Pour in the melted, cooled butter and beat again. Add the cream cheese and continue beating.
- Sift the flour, baking soda, and baking powder into a bowl, mix, and beat with a mixer. Add the vanilla extract right at the end.

- Transfer the batter to a piping bag and pipe into silicone molds, filling them halfway.

- Bake at 180°C for 18-20 minutes - check doneness with a dry toothpick.

- Let the cupcakes cool completely, remove from the molds, and top with frosting.

Tips
- Instead of cream cheese, you can use smooth (not grainy) farmer's cheese spread or vanilla curd cheese bars.
- Be sure to cool the melted butter before adding it to the egg mixture.
- Fill the liners only halfway - the batter rises well.
