Sponge "moss" is a popular cake decoration made in the microwave in just 3 minutes, right inside disposable cups. One egg makes 4 cups of porous, colorful sponge, and it keeps for up to a month in a container in the freezer. Recommended for working a little magic in your own kitchen.

Ingredients
  

  • 1 egg
  • 10 g sugar
  • 30 g honey
  • 25 g flour
  • 2 g baking powder
  • food coloring optional
  • 4 food-grade disposable PP cups

Method
 

  1. Whip the egg with the sugar and honey using a mixer until pale and fluffy.
  2. Add the food coloring and whip again.
  3. Turn off the mixer, sift in the flour and baking powder, and fold in with a spatula.
  4. Divide the batter among the cups, filling no more than halfway, ideally less.
  5. Microwave for 2 minutes at 800 W, then 1 minute at 1000 W.
  6. Remove the sponges, turn them out, and let cool.
  7. Cut the cup open with scissors to release the sponge and use it for decoration. Wishing you all creativity and inspiration!

Notes

Keeps for a month or longer in a container in the freezer.

Tips

  • Fill the cups no more than halfway, or even less - the batter rises a lot.
  • Use only food-grade disposable cups marked PP that are microwave-safe.
  • The easiest way to remove the finished sponge is to cut the cup open with scissors.
